Let's get right down to it! Avocado is amazing for you. It is full of fat, protein and fiber, as well as a multitude of micronutrients including pantothenic acid, vitamin C, vitamin E, vitamin B6 and others. That is why eating guacamole is going to save your life! Ok, it won't save your life but it will definitely save your tastebuds.
It is important to note that not all guacamole is created equal. Unfortunately, many store bought brands hardly utilize avocado in their 'guacamole'. In order to keep costs down they replace what should be the FIRST ingredient with the less than wholesome ingredient, soybean oil. Soy beans are heavily sprayed pesticides and herbicides, unless of course you buy organic. If you're not purchasing your guacamole from a health food store, it's probably safe to say that the guacamole you are buying is NOT made with organic soy bean oil.
Making home-made guacamole can be time consuming, but it is totally worth it. It will be fresher and you have 100% control over what is going in it. Here is a recipe for the BEST guacamole you will ever eat, I promise!
Ingredients
2 Ripe Avocados
1/4 Cup Minced Red Onion
1/4 Cup Diced Cherry Tomatoes
2 Juiced Limes
1 Clove Minced Garlic
3 Sprigs of Chopped Cilantro
1/2 Chopped and Seeded Jalepeño
Salt and Pepper to Taste
FUN ADD INS: Roasted Corn, Diced Roasted Red Pepper, Black Beans, Grated Parmesan Cheese, or Pineapple
(all of these options are great for a fun twist)
Directions:
Mash avocados with a fork until slightly chunky. Stir in lime juice until fully incorporated. Fold in minced and chopped ingredient and garnish with cilantro!
